Wales has some of the best locally produced food in the world. Welsh food and Welsh culture go hand in hand. You really should try some traditional dishes such as cawl (traditional soup served with local cheese), bara brith (a fruit loaf or cake), cacen gri (Welsh cakes toasted on a griddle). Wales has a modern take on traditional and not so traditional products that are simply the best.
